Vegetarian Lasagne Recipe

Are you looking for a good veggie lasagne recipe? Look no further, here is a tasty and easy to make recipe for vegetarian lasagna. It is ideal for dinner parties as you van prepare it in advance, even the day before and just pop it in the oven.

For the filling:
2 courgettes halved and sliced
2 red peppers diced
1 large onion or red onion chopped
10-15 mushrooms
3 cloves of garlic
1 tablespoon of olive oil
1 tin of tomatoes
1 teaspoon of italian seasoning
2 vegetable stock cubes
9-10 lasange sheets

For the cheese sauce:
600ml of milk
30g of butter
35g of plain flour
50g grated cheese
salt, pepper and nutmeg to tast

To make the filling
1) Heat the olive oil in a pan and gently fry the onions and garlic until soft
2) Add the peppers, mushrooms and courgettes and fry for around 5 minutes
3) Add the tin of tomatoes and Italian Seasoning
4) Add the vegetable stock cubes (dissolve in 50ml of boiling water)
5) Leave the mixture to simmer for 30 minutes
6) Add salt and pepper to taste

To make the cheese sauce:
1) heat the milk in a saucepan with the butter
2) When the milk has started to warm add the flour
3) Whisk continually to ensure that there are no lumps
4) Continue to whisk until the mixture thickens
5) Stir in the cheese until it has completely melted
6) Add a pinch of salt, pepper and nutmeg

To Prepare the lasange
1) Place a layer of the lasagne micture on the bottom of a casserole dish
2) Place a layer of cheese sauce on the top
3) Cover with the lasagne sheets. Make sure that the pasta is completely covered
4) Repeat steps 1) -3 until the dish is full
5) Finish with a layer of cheese sauce and optionally add a sprinking of parmesan cheese

Pop everything in the oven at 200 degrees centegrade and cook for around 45 minutes.

Voila! A delicious vegetarian lasagne for 4-6 people! Serve with a crisp salad and some garlic bread.
